Spring Thyme

There is plenty to be excited about this spring.

Why not celebrate the longer evenings in our sunset pool – Eve – followed by dinner at Thyme? Or alternatively, start your day with breakfast and bathing. Come in and try some of our favourites.

  • Green Good Morning Smoothie packed with vitamin-rich ingredients.
  • Skull Island prawn toast with avocado and a tangy yuzu dressing.
  • The delicious Karen Martini fried fish sandwich with iceberg lettuce, shiso, and pickled ginger.
  • The decadent chilled watermelon with a vodka and cherry syrup, raspberries and pomegranate, with fiore di latte gelato.

All of this can be enjoyed with a glass of Montalto’s sparkling rosé or another of the incredible Mornington Peninsula wines, beers or juices available on our beverage menu.

Why not try one of our mocktails or cocktail like Summer Thyme with Bass & Flinders Orient Gin, passionfruit, orange, bitter and thyme?

We have springs and dining packages available for breakfast, lunch and dinner.

About Thyme

Thyme features a menu created by well-known Melbourne chef, restaurateur, cookbook author and television presenter, Karen Martini, with head chef Mario Di Natale at the helm.

Di Natale has 16 years’ experience, 12 of them working with the team at Grossi Florentino, including a stint in Perth where he opened Garum in the Westin Hotel, achieving the coveted Chef’s Hat status within its first year.

Together Karen, Mario and their team are sourcing produce of the highest quality, from local, Australian and organic farmers committed to sustainable farming practices.

Thyme will open from 7.00am to 10.00pm daily for guests of the thermal springs and spa. OPENING SEPTEMBER 2022.
