The Alba Thermal Springs & Spa team understands indulgence is as vital to well-being as discipline and that treats can be enjoyed with treatments.

Acknowledging this, Alba’s spa restaurant, Thyme, has announced a year-long series of high tea sittings known as Tea Thyme on the last Sunday of each month from 2pm.

Thyme’s head chef Mario Di Natale has drawn inspiration from local and seasonal produce to create a sensational sweet and savoury menu paired with a bottomless glass of sparkling wine.

While the offering of savoury and sweet morsels may be traditional, this menu is anything but, with plenty of exotic flavours.

Tea Thyme guests will be treated to tasty, toasted brioche with duck liver parfait, mirin jelly, Davidson plum and charred spring onion; dainty ribbon sandwiches with Sichuan white pepper roasted chicken, chives, and avocado; savoury tart topped with whipped fetta, beetroot relish, and spiced seed praline; a pressed sandwich of black sesame cream cheese, pickled wakame cucumber, and dill.

Sweet treats include sherbet madeleines with yuzu curd custard; profiteroles with Chantilly cream, pandan jelly, and strawberries; blinis, blondies, tiramisu, and more. High tea is served with a choice of teas, including Alba’s signature blend, Unearthed English breakfast, green jasmine, Earl Grey, peppermint, chamomile, or lemon and ginger.

Thyme’s spectacular setting, with its indoor and outdoor terrace dining, allows guests to enjoy restful vistas across the pool and tea tree ridges towards the Peninsula horizon.

The Tea Thyme experience includes all-day bathing in Alba’s thermal springs and a take-home gift of Alba’s custom-blend herbal tea.
