An exciting Thyme

We’ve been hard at work readying our spa, developing our range of treatments and experiences and continuing the landscaping of our beautiful native gardens in the lead-up to our spring 2022 opening.

Today, we are delighted to share more exciting news.

Alba has teamed up with celebrated Melbourne chef, restaurateur, cookbook author and TV presenter, Karen Martini to develop a culinary program at Thyme, our 120-seat restaurant in our main spa building.

Comprising part of an expansive roof terrace, diners at the indoor-outdoor restaurant will enjoy spectacular views of our stunning water features, landscaped gardens, and across the Mornington Peninsula.

Recently hailed a Food Legend at the 2021 Melbourne Food and Wine Festival, Karen Martini brings with her over 30 years’ culinary experience heading up some of Australia’s best-known restaurants.

Karen was the founding chef at the critically-acclaimed Melbourne Wine Room and Sydney’s Icebergs, and recently launched the Good Food Guide acclaimed restaurant, Hero at Federation Square.

And with six cookbooks to her name, multiple TV credits including resident chef on Better Homes and Gardens, and food columnist in The Age Good Weekend, we’re honoured to have Karen in our team.

In keeping with Alba’s ethos of wellbeing and nourishment, Thyme will offer a vibrant healthy menu, featuring fresh, wholesome dishes with modern influencers. Diners can expect signature dishes, exceptional poke bowls, and a menu that makes the most of fresh herbs, crisp vegetables, and lean meats. Built on our commitment to support local growers and suppliers, we will be seeking seasonal produce from farmers with sustainable practices, and choosing organically-grown wherever possible.

A well-curated wine list will again look to the Peninsula’s many local vineyards.
